The last year has been an exciting and challenging one for Mild Bill’s. Our business has grown by leaps and bounds, our customers have racked up many awards and we have been grateful for everyone’s continued business and support. While we have been blessed beyond measure business wise, there have been personal challenges this past year that have affected our business and our customers. We feel it is time to address the rumors, let everyone know what has been and is going on and above all else, apologize for the numerous orders that have been delayed.
Kelly Brignon, our Spice Mistress, has been battling health issues for the past three years. Last year, she was diagnosed with Crohn’s Disease and despite the amazing medical care and hospital stays throughout the past year, she has been unable to achieve remission and function symptom free. Because of this, she has not been able to devote all of her time and attention to Mild Bill’s and is fully aware of the problems it has caused with orders being processed in a timely manner as well as customer communication. While we have hired part time help when needed, the volume of orders has still been too much for Kelly to handle even with help. We know we have upset many customers and for that we truly apologize. It has been at Kelly’s discretion when to let friends and customers know what has been going on with her health as she has preferred to keep some details about her condition private. By remaining silent, we’ve allowed our customers to hear things about our business that aren’t true. We’ve also let orders go out late without an explanation and that has not been the best decision. Unfortunately, these rumors come from people who do not have our best interests at heart; some of them know why orders have gone out late, the phone unanswered and calls not returned, yet they choose to tell others that we are out of business or are closing Mild Bill’s, both of which are untrue. There have been exaggerated rumors regarding Kelly’s health that have been misleading.
Mild Bill’s is a thriving business with an exciting future. Our goal is to restore our customers’ faith in our service and continue to let our products speak for themselves. We want to do what we can to earn back the business of those we have upset and continue to supply spices to those who have stood by us and had faith in us both personally and professionally.
We take pride in our products and refuse to prepackage any of our spices. All of our spices are kept in a walk in cooler and are packaged as ordered. You will not find our products hanging from a wall where the sunlight has discolored them after hanging there for months at a time, turning the bags orange and losing their freshness. We aim to process and ship orders within four business days. Kelly and I know that this has not been the case of the past year and we have taken steps to hire full time help who is going to work tirelessly alongside the both of us to make sure orders are processed correctly and on time. Our new employee will be answering the phones everyday from 10am until 2:30pm. Calls made after 2:30 will be returned the next business day. From 2:30pm until 5pm, we are getting orders ready for the post office and UPS. Please be kind to our new employee – she is learning and may not always have an answer – but will find out what you need to know and make sure you are taken care of no matter who you are or what size of an order you are placing. All of our customers – whether you are ordering for the first time or the 100th time – matter to us. We are not Amazon. We are a family owned business who believe in personalized service and quality products. While you may not receive your order the next day, you will receive spices that are of the highest quality and stored in a temperature and humidity controlled cooler until they are packaged for an order.
Kelly and I choose not to address the myriad of tales that have been told about us by people who don’t know our personal business. We are aware of representatives of certain organizations contacting our customers and telling them not to order from us or allow us to sponsor their events because we are not sponsors of their particular organization. We find both situations to be unfortunate and more of an indication of the type of people they are than who we are. Let it be known that we support anyone and everyone who cooks chili – regardless of your affiliation. We do what we can to lend support to local cook offs, national cook offs, and cook offs held by customers and friends raising money for great causes and do not play favoritism with respect to any region or organization. If you cook chili and need spices – we want to be your spice company. If you are raising money through chili and need support or want to show your cooks your appreciation for their support of your event, then we are happy to help.
Because of Kelly’s health and the numerous construction, permitting and planning delays with the Dallas Farmer’s Market, we have made the decision to remain an online business only for the foreseeable future. In preparation for the move to the DFM, we moved out of our location in downtown Ennis. We now have a new “World Wide Headquarters” equipped with a cooler and all of the necessities to blend spices and package spices as well as fill and ship orders in a timely manner. It is our hope to find a new storefront in a central location within the next year.
Kelly will be going back into the hospital tomorrow while her doctors do what they can to address her health issues and get her back to the feisty individual we all know and love. She appreciates the kind words and prayers that have been sent her way. It is her mission to get back to doing what she loves so that she can continue to spread her love of chili and spices to everyone she talks to. Rest assured that your orders will go out without delays, your calls will be answered and returned and emails responded to while she is unavailable. We ask that you continue to be patient with us and we value each and every one of you. I will also be filling orders and available to our customers should any of you need anything. Kelly will also be available via email and will respond as quickly as she can.
Again, we thank each and every one of you for your continued support and business. We hope to regain the trust of those who have lost faith in us and remind those who have stuck by us (even when your order showed up later than it should have!!) why you have stood with us even when we weren’t at our best – because we take pride in our products and you won’t find fresher spices anywhere else!

We are currently in one of the busiest seasons we have ever experienced! From August 30th through May 31st, the competitive chili season is in full swing. It is during this time that people are ordering spices in order to qualify for their respective world championships (CASI, ICS, and Tolbert) as well as prepare for upcoming cook offs taking place every weekend all over the country that will qualify them for next year's championships. Factor in everyone who doesn't cook competition chili and wants to use hiqh quality spices to cook chili for friends and family, parties, caterings and back yard cook offs and we have got one heck of a back log! PLEASE DO NOT WAIT UNTIL THE LAST MINUTE TO PLACE AN ORDER!!!!! I cannot stress that enough! Remember, Express Shipping applies only to the manner in which your order is shipped by the US Postal Service - not the order in which it is processed. We completely understand that you want your order as quickly as possible and rest assured that we are working diligently to process your order and ship it so that you have it for your event. As always, please call the store with any questions. We want YOU to be pleased with not only our products, but our service as well!
Please remember - our spices are not prepackaged! Everything is kept fresh in our walk in cooler and packaged as ordered. You will not find a fresher, higher quality chili powder or blend. We do not package in advance and we do not have spices already bagged waiting to be placed in a box and shipped (we are DEFINITELY not Amazon!!!). As a family owned business with ONE full time employee (The Spice Mistress herself), the quality of the products we provide to our customers is of the utmost importance and that is why we keep them in a temperature and humidity controlled walk in cooler until it's time for them to be packaged and shipped to you.

In order to better serve our customers, Mild Bills will occasionally suspend store hours and shipping so that we can personally offer our products to our customers directly at cook-offs. We use our homepage to communicate this important information to our customers, such as store closings, hours of operation, etc. that is not visible on the mobile site. When placing an order, please make sure you are viewing our full site and not the mobile site. You can usually switch over at the bottom of the page by clicking on "full site". Due to the implementation of this policy, Mild Bill's will no longer refund shipping charges on orders placed while we are closed. We make sure our customers are notified in advance of all store closings and any orders placed during that timeframe will be shipped in accordance with the notification placed on our homepage.
