Mild Bill's is the home of quality spices and friendly service. Established in 1998 by Bill and Tamara Dees, Mild Bill's Spice Company, Inc. was obtained by Gary and Kelly Brignon in January 2011. They met the Dees' through CASI (Chili Appreciation Society International) Chili Cook Offs and the rest they say, is history. Unable to pass up the opportunity to purchase Mild Bill's from Bill and Tamara, Gary and Kelly have been overwhelmed by not only their support, but that of their friends, family and customers all over the country!
Gary and Kelly cook chili throughout the year with both of their daughters, Zoe and Paige. Zoe is a 4 time North Texas Junior Chili Champion (and owner of more Wendell Rankin stoves than the adults in the family!) and Paige is the current North Texas Junior Chili Champion and a TOT Junior Champion. Gary and Kelly aren't so bad themselves - Gary is the 2013 Texas Men's State Champion, Kelly is the 2011 State Fair Chili Champion and the 2009 Tri State Champion and both have placed at multiple cook offs since they began cooking chili, including Southwest Open, Louisiana State Cook off, and Texas Open to name a few. They love traveling throughout Texas and meeting new friends as well as getting to know their customers. Kelly is an avid cook and enjoys incorporating as many of Mild Bill's delicious products in her recipes. Mild Bill's is located at 113 W. Knox St. (the former Ennis Meat Market) in Downtown Ennis and open Wednesday thru Friday, 10am-4pm. Please stop by and visit the store! Call first....as we like to say we're "open when we're here and closed when we're not"! Orders are shipped daily and both the USPS and UPS are utilized to get your spices to you as quickly, safely and inexpensively as possible. The integrity of Mild Bill's spices is the most important thing to them (behind great service) and it's important that you to receive them as promptly as possible. All of the spices are kept in a temperature and humidity controlled cooler - it's VERY "chili" in there! Spices do best in a cool, dark environment - they stay in there until you order them and are immediately packaged and shipped to you. The Spice Queen promises that you won't find higher quality spices anywhere else! Please keep an eye on our calendar to find out where they'll be next.
