Chuck’s Spicy Peach Glaze
2 jars Mild Bill's Spices “Texas Twist” Hot Peach Preserves
1 Tablespoon finely chopped garlic
3 Tablespoons olive oil
2 Tablespoons soy sauce
1 Tablespoon Dijon mustard
Salt and freshly ground pepper
1 Chicken - cut in half
Combine all the ingredients in a medium bowl and season with salt and pepper to taste.
Brush the chicken with olive oil and place chicken on the smoker bone side down.
Brush the spicy peach glazes on the chicken from time to time.
Cook between 3 and 3 1/2 hrs.
